Picnic-Perfect Chicken Orzo Salad Recipe

Either way, this Picnic-perfect Chicken Orzo Salad is ready to be the star of your next warm weather get‑together. It’s bright, refreshing, and just fancy enough to make your guests think you spent way more time on it than you actually did. Grab a big bowl, pour yourself something cold, and let the summer party begin.
Ingredients
| 12 ounces | Uncooked orzo |
| 2 cups | Mayonnaise |
| 1 tablespoon | Salt |
| 2 tablespoons | Lemon juice |
| 4–5 cups | Cooked chicken, cubed |
| 2 cups | Halved green grapes |
| 2 cups | Seeded chopped cucumbers |
| 1 cup | Chopped celery |
| 1/4 cup | Half & half |
| 2 tablespoons | White pepper |
Instructions
- Cook orzo following the package directions. Drain and rinse with cold water.
- In a bowl combine mayonnaise, half & half, salt, pepper and lemon juice.
- Stir in cooked orzo, grapes, chicken, cucumber and celery.
- Mix well, cover and put in the refrigerator overnight.
Note: This recipe serves 8–10 people.
