How To Make Veggie Noodle Pad Thia

Ingredients
- 1/3 cup Hoisin sauce
- 1/3 cup lime juice
- 1/3cup peanut butter
- 1 Tbsp.Sriracha (optional)
- 1/2 pound smoked tofu
- 3 tsp. canola oil
- 4 minced garlic cloves
- 1 Tbsp. minced ginger
- 2 cups spiraled zucchini noodles
- 2 cups matchstick carrots
- 2 cups bean sprouts
- 1/2 cup chopped cilantro
- 1/4 cup chopped, roasted peanuts (optional)
- 1/2 cup Thai basil leaves
- Whisk Hoisin sauce with lime juice, peanut butter and Sriracha (optional) in a medium-sized bowl.
- Pat tofu dry and cut crosswise into 1/4" thin slices. Heat a large frying pan or grill pan over medium heat. Use 2 tsp. of canola oil and add tofu. Cook until golden and place on a plate.
- Add remaining 1 tsp. of oil, garlic and ginger to pan and stir for 30 seconds. Add zucchini noodles and carrots. Stir ingredients for 2 to 3 minutes, until vegetables are tender.Add in reserved sauce to coat vegetables.
- Plate and top with tofu, bean sprouts, cilantro and peanuts (optional).
- Squeeze lime juice onto the plate and add Thai basil leaves.
