How To Make Shepherd's Pie With Cauliflower Mash

Ingredients
- 1 medium-sized cauliflower, cut into bite-sized pieces, about 9 cups (Tip: cauliflower rice works as well.)
- 1/4 cup milk
- 3 Tbsp. unsalted butter, separated
- 1 tsp. salt
- 1 onion, finely chopped
- 1 pound ground beef
- 1 1/2 cups beef broth
- 5.275 oz. can tomato paste
- 1/4 cup HP sauce (a brown sauce adding oomph to your favorite dishes—find at Walmart, Target or Amazon)
- Pepper to taste
- 2 cups frozen, mixed vegetables, such as peas, corn and carrots
- Preheat broiler to high.
- Boil a large pot of water. Add cauliflower and cook, covered, until tender (about 12 to 15minutes). Thoroughly drain and transfer to a food processor. Add milk, 2 Tbsp. butter and salt. Blend until smooth.
- Melt remaining 1 Tbsp. butter in a large frying pan over medium-high heat. Add onion and cook until softened (about 2 to 3 minutes). Add in the beef. Cook, stirring occasionally, until meat is no longer pink. Add beef broth,tomato paste and HP sauce. Season with fresh pepper
- Reduce heat to medium-low and simmer for 5 to 6 minutes. Add in frozen mixed vegetables and cook until warmed.
- Divide meat and vegetables into 6 individual, oven-proof dishes, then add the cauliflower mash to the top. Set dishes on a baking sheet.Broil in oven until the mash is warmed (about 2 to 3 minutes).
