 How To Make A Crustless Quiche Lorraine

Ingredients
  • Cooking spray
  • 6 strips center-cut bacon
  • 1 cup grated Gruyere cheese
  • 2/3 cup 2% milk
  • 1/4 cup half & half cream
  • 6 large eggs
  • Salt to taste
  • 1 Tbsp. minced ginger
  • 1/8 tsp. ground black pepper
  • Pinch of freshly grated nutmeg
  • 2  Tbsp. chopped chive
Steps
  1. Preheat oven to 350oF. Coat pie dish with cooking spray.
  2. Cook the bacon in a large frying pan with a lid on medium heat, arranging strips of bacon in a single layer on the bottom of the pan.
  3. Once finished, lay the cooked strips on a paper towel. Wait to cool and then chop the cooked bacon crosswise into 1/4"  to 1/2" pieces.
  4. Spread the bacon in the pie dish and top with grated Gruyere cheese.
  5. Create the custard mixture by whisking together the milk, half & half, eggs, salt, black pepper and the nutmeg.
  6. Pour the custard into the pie dish and top with chives.
  7. Bake the quiche for 35 minutes (until the center is set).
  8. Cut the quiche into 6 pieces and serve.
Pairs well with a fresh salad or fruit.
