How To Make A Crustless Quiche Lorraine

Ingredients
- Cooking spray
- 6 strips center-cut bacon
- 1 cup grated Gruyere cheese
- 2/3 cup 2% milk
- 1/4 cup half & half cream
- 6 large eggs
- Salt to taste
- 1 Tbsp. minced ginger
- 1/8 tsp. ground black pepper
- Pinch of freshly grated nutmeg
- 2 Tbsp. chopped chive
- Preheat oven to 350oF. Coat pie dish with cooking spray.
- Cook the bacon in a large frying pan with a lid on medium heat, arranging strips of bacon in a single layer on the bottom of the pan.
- Once finished, lay the cooked strips on a paper towel. Wait to cool and then chop the cooked bacon crosswise into 1/4" to 1/2" pieces.
- Spread the bacon in the pie dish and top with grated Gruyere cheese.
- Create the custard mixture by whisking together the milk, half & half, eggs, salt, black pepper and the nutmeg.
- Pour the custard into the pie dish and top with chives.
- Bake the quiche for 35 minutes (until the center is set).
- Cut the quiche into 6 pieces and serve.
