Taco-Stuffed Avocados

Ingredients
  • 4 ripe avocados
  • Juice of 1 lime
  • 1 tablespoon extra-virgin olive oil 1 medium onion, chopped
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2/3 cup water
  • Kosher salt
  • Freshly ground black pepper
  • 2/3 cup shredded Mexican cheese 1/2 cup shredded lettuce
  • 1/2 cup quartered grape tomatoes Sour cream
Directions

Step 1: Halve and pit the avocados. Scoop out a small amount of avocado to create a larger space for the meat. Dice removed avocado and set aside. Squeeze lime juice over all avocados to prevent turning brown.

Step 2: Heat oil in a medium skillet over medium heat. Add onion and cook 5 minutes. Add ground beef, separating the meat with a wooden spoon. Cook until the beef is no longer pink, around 6 minutes. Remove from heat and drain fat. Stir in 2/3 cup water and taco seasoning. Once boiling, reduce heat and simmer uncovered for 3 to 4 minutes, stirring often until thickened. Season with salt and pepper.

Step 3: Fill each avocado half with beef. Top with remaining diced avocado, cheese, lettuce, tomato and a dollop sour cream.
