Mother’s Day & Father’s Day Recipes

Celebrate Mother's Day and Father's Day with  a home-cooked meal. Grab an apron and enlist family members to help with meal preparation and cooking. Choose from either recipe below, and dinner is sure to be a hit!

Crab cake ingredients

  • 1 pound crabmeat
  • 1½ tablespoons dry bread crumbs 
  • salt and pepper to taste
  • 2 teaspoons Old Bay seasoning 
  • 1 egg 
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

Corn salad ingredients

  • 1 package frozen sweet corn
  • 1 pint cherry tomatoes
  • 1 small red onion, diced
  • 2 tablespoons chopped cilantro 
  • 2 tablespoons olive oil 
  • 3 tablespoons white wine vinegar 
  • salt and ground black pepper to taste
  • 1 small container feta cheese

Steps

  1. Preheat oven broiler.
  2. Mix the crabmeat and dry ingredients together.
  3. Beat the egg, add Dijon mustard and mayonnaise. Combine with other ingredients and fold them together. Form into patties and place on a lightly greased broiler pan or baking sheet.
  4. Broil for 10 to 15 minutes, until lightly brown.
  5. While the crab cakes are cooking, place the bag of frozen corn in the microwave. Cooking times are listed on the bag. 
  6. Drain the corn and allow to cool.  
  7. In a large bowl, mix the corn with the tomatoes, diced red onion, cilantro, olive oil, vinegar, salt, and pepper together. 
  8. Add feta cheese to salad just before serving.
  9. Serve the parent of honor one crab cake and a large scoop of corn salad.

Ingredients

  • 2-4 boneless, ribeye steaks
  • salt, pepper and garlic powder to taste 
  • olive oil
  • 1 pound asparagus spears

Steps

  1. Prepare the steaks by trimming the outside fat. and then patting dry.
  2. Season steaks with salt, pepper and garlic powder.
  3. Prepare the asparagus by breaking the rough ends off.
  4. In a shallow pan, toss the spears with olive oil, salt, pepper and garlic powder.
  5. Pre-heat your grill on a high setting. When you're ready to cook the steaks and the asparagus, turn it down to medium heat, and brush the grill grates with olive oil. 
  6. Place the steaks and the asparagus spears directly on the grill. For the steak, cook 5-7 minutes on each side. (Leave it on the grill longer if you prefer your steak more well done). For the asparagus, turn every few minutes until lightly charred.
  7. Turn off the grill and place the steaks on a plate. Let them rest for 5 minutes before serving with the asparagus.
