Honey Pecan Kiwi Salad

Ingredients
- 5 cups torn Boston lettuce
- 3 medium kiwi fruits, peeled and sliced
- 1/4 cup chopped pecans, toasted
- 2 tablespoons vanilla yogurt
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 tablespoon honey
Directions
- Preheat oven to 350°F.
- Toast pecans in oven by baking in a shallow pan for 5 to 10 minutes.
- Combine lettuce, kiwi and pecans.
- Mix yogurt, lemon juice, oil and honey until smooth.
- Pour yogurt mixture over salad, toss and immediately serve.

- Prep: 20 minutes [It takes time to tear the lettuce and peel then slice the kiwi, in addition to toasting pecans.]
- Yield: 6 servings
