Easy Recipes: Balsamic Roast Pork Tenderloin

A special meal for when you have a little time.

Ingredients
• 4½ pounds pork tenderloin
• 4 tablespoons balsamic vinegar
• 4 tablespoons extra-virgin olive oil
• 8 cloves garlic, cracked
• coarse salt and black pepper
• 4 sprigs fresh rosemary, leaves stripped and finely chopped
• 4 sprigs fresh thyme, leaves stripped and finely chopped

Prep: 10 minutes
Cook: 20 minutes
Total time: 30 minutes Servings: 10
Steps
• Preheat oven to 500°F.
• Remove connective tissue off tenderloin with a thin, sharp knife.
• Place tenderloins on a nonstick cookie sheet with a rim.
• Add balsamic vinegar and rub into the meat.
• Drizzle tenderloins with extra virgin olive oil
• Cut slits into the tenderloin and add the cracked garlic cloves into the meat.
• Combine salt and pepper with rosemary and thyme then rub onto the meat.
• Roast in oven for 20 minutes.
• Remove meat from oven and let rest.
• Slice and serve.
